It's prime crawfish season and a local restaurant is getting ready for a busy month ahead.
You can find a taste of Louisiana in Tulsa at Cajun Ed's Heberts Meats where you can find fresh boiled or live crawfish. It's that time of year for crawfish boils, where people gather with friends, crawfish are spread out across the table as everyone eats to their heart's content.
Ed Richard, or Cajun Ed, says first, you start with live crawfish, which come in sacks or by the pound. Cajun Ed's gets deliveries three days a week on Tuesdays, Thursdays, and Saturdays. He says the crawfish are caught in Louisiana and delivered the next day.
To cook them, he says to add seasoning to a pot of water, about one cup per gallon. He says you can mix in other items like shrimp, corn, or potatoes, then boil with all the flavors. Richard says to use a pot with a basket inside so you can easily dump the crawfish on the table.
After that, he says to sprinkle more seasoning to get it on the shell. He says to eat one, pinch the tail until it cracks, peel off the first couple of shells, squeeze the tail to get out the meat, and bon appétit!
"You can't beat it,” Richard said. “And when you're in Louisiana, you're eating with a bunch of crawfish eaters. You have to get in there and get what you want, or you won't get what you need. You learn how to eat quickly, peel them fast.”
