Welcome to the Cooking Corner in the Air Comfort Solutions Kitchen. We're happy to welcome back Alfredo Cisneros from the Hard Rock Hotel and Casino. Today we are learning to make Pork Pozole.
Keep Cold Food Below 40 Degrees
Keep Hot Food Above 140 Degrees
INGREDIENTS
5 lb. - Pork Butt (cut on 1” dice)
1 gal - Water
4 tbs - Granulated Chili Powder
4 tbs - Paprika
1 tsp - White Pepper
1cup - Granulated Garlic
2 ea. - Bay Leaves
1 tbs - Pickle Spice Seasoning
1/3 lb.- Chicken Base
3.3 lbs. - Can of Hominy
METHOD
1. Put diced pork into a large pot along with 1 gallon of water.
2. In a cheesecloth put pickle spice and make a knot bring to a boil for at least 1.5 to 2 hours until the pork starts getting tender.
3. Add the remaining ingredients to the pork. Bring to boil for 10 minutes and low heat to simmer until the pork is tender and ready to serve.
To serve (Condiments added as needed for your favorite taste.)
· 1 - Head of Cabbage (finely shredded)
· 6 ea. - Radish (Thinly slice on wells)
· 2 tbs. - Dry Oregano
· 1ea. - Diced Yellow Onion
· 1- Cholula Salsa
