We're happy to welcome Chef Alfredo Vargas from the Hard Rock Hotel and Casino back to the Cooking Corner. This time we are making Bubble and Squeak Pancakes.
INGREDIENTS Brussel Sprout Potato Cake
¼ yellow diced Onion 1: finely shred the onions and Brussel
5 ea. Medium Brussel Sprouts sprout in the robot coup.
2 ea. Pre-cook Bacon 2: Lardon the bacon into strips.
1 Cup Mashed potatoes 3: Mix the cabbage, black pepper and
2 ea. Whole Eggs potatoes.
¼ tbs Chives
Salt and pepper to taste
3 oz. Slice pineapple
3 oz. Slice Cantaloupe
3 oz. Slice Honeydew
1 ea. Strawberry
1 Slice of Orange
METHOD
1: Butter the pan a medium heat, and please 2 ea. 5 oz of bubble and squeak on the grill and flatten into a 3” cakes on the pan.
2: Allow the cakes to BROWN and flip over to brown on the opposite side
3: Cook the eggs to your preference.
4: Garnish with finely shredded chives
