We're happy to welcome back our friend Sharon Stroud to the Cooking Corner today we are making a Garlic Baby Bok Choy.
Ingredients
1 tablespoon coconut or extra virgin olive oil
6 cloves garlic, minced
2 large shallots, finely chopped
2 pounds baby bok choy, halved or quartered
2 tablespoons low sodium soy sauce or tamari (Coconut Aminos may be substituted for soy sauce)
1 teaspoon sesame oil
1 teaspoon crushed red pepper, optional
Directions
Add the oil to a large wok or skillet over medium heat. Swirl to coat the entire surface of the pan. Add the shallots, stirring continuously and cook for about 1 - 2 minutes; then add the garlic and cook for another minute or until fragrant.
Add the bok choy, soy sauce, and the sesame oil. Toss to coat and cover. Cook for 1 – 2 minutes, uncover and toss, and then cover and continue to cook until bok choy is cooked to desired doneness (approximately 3-5 minutes more).
Sprinkle with crushed red pepper and serve immediately.
You may use bok choy or baby bok choy for this recipe. If you use bok choy, you may want to chop it into smaller pieces to expedite cooking time.
