A new dining concept is getting ready for its grand opening next week.
The Head Chef says what the restaurant on Guthrie Green will have to offer.
Finishing touches are happening inside and out at En Fuego to make sure it's ready for opening day on December 5.
"It's a lot of opening boxes and putting things together. It's a lot of prep and stuff in the kitchen and ironing out our recipes," said Cody Stell, the Head Chef for En Fuego.
The restaurant offers fresh baja-inspired Mexican food in a quick and relaxed setting.
"Not trying to reinvent the wheel but trying to elevate the taco stand," Stell said.
He was a part of En Fuego's first go-around on Brookside. He said he loves the concept and wanted to be a part of its reopening at Guthrie Green.
"I just wanted to be a part of this," he said. "I thought it would be fun."
Stell says the team has put a lot of work into the restaurant, and they're ready to see it come to life.
"You know, there's some nervousness, obviously, but definitely more excited than nervous," said Stell.
Although this location has seen many restaurants come and go, he's confident in what they are bringing to the table.
"There is a challenge coming to a spot, but I think number one, we're known for our great service, and we're going to have great food," he said.
They are looking forward to serving their food to everyone, big and small, who wants to spend a day at Guthrie Green.
"So if you have your family at the park at Guthrie Green to enjoy the day, you don't have to worry about bringing your lunch if you don't want to," Stell said. "You can come, get some tacos or kid's nachos or whatever."
The restaurant owners say En Fuego will officially open December 5, but the first two weeks will be a soft opening.
