Baked Imperial Chicken w/ Cumberland Sauce

Yield:
Ingredients:
5 or 6 boned chicken breasts
1 stick butter (or margarine)
1/2 C. grated parmesan cheese
2 C. seasoned breadcrumbs
3 T. sesame seeds

Cumberland Sauce:
1 C. red currant jelly
1/2 6 oz. can orange juice concentrate or fresh oranges-juice and a little rind
4 T. dry sherry
1 tsp. dry mustard
1/8 tsp. ground ginger
1/4 tsp. Tabasco
Directions:
Dip chicken in melted butter. Mix next three ingredients together. Roll chicken in mixture and place in shallow baking dish and refrigerate. When ready to cook, bring to room temperature and dot with butter. Bake at 350 degrees F. for 1 hour or less.

Cumberland Sauce:
Combine ingredients and simmer until smooth. Serve over chicken and rice.
