Yield:
14 servings, approximately 1 cup each
Ingredients:
Butter-flavored cooking spray
2 lb. Yukon gold potatoes, thinly sliced
1 medium onion, chopped
1 pkg. (2.1 oz.) fully cooked bacon (15 slices--70 calories per 3 slices)
2 C. frozen peas
2 C. light cheddar cheese (4.5g fat per 1/4 cup)
Directions:
Preheat oven to 375 degrees. Spray a 9 x 13-inch baking dish with nonstick cooking spray. Place potatoes, onion and bacon into baking dish and stir. Cover and bake for 60 minutes or until potatoes are tender. Remove from oven and stir in peas and cheese. Return to oven and bake an additional 15 minutes or until peas are warm and cheese is melted.
