Ingredients:
Vegetable cooking spray1 cup packed brown sugar
1/2 egg subsititute
1/3 cup + 2 tablespoons fat-free sour cream
2 tablespoons canola oil
1 1/3 cups mashed ripe bananas (about 2 large)
1 cup dry old-fashioned oats
1/2 cup fat-free milk
1 teaspoon vanilla buttering and nut flavoring
2 cups flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
Directions:
Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with vegetable cooking spray. In a large bowl, combine brown sugar, egg substitute, sour cream and oil. Blend bananas, oats, milk and flavoring. Combine remaining ingredients in a medium bowl. Add to wet ingredients, stirring until moist. Pour into prepared pan and bake 50 - 60 minutes or until a toothpick is inserted in center of bread comes out clean. Cool 10 minutes in pan, then remove to wire rack.
