Ingredients:
2 tablespoons red onion
1 tablespoon light margarine
1 cup egg substitute
1 cup skim milk
dash of salt & pepper
1/4 teaspoon ground nutmeg
1/2 cup fresh spinach, chopped
1 slightly baked pie crust
3/4 cup Swiss cheese, grated
Directions:
Preheat oven to 350 degrees. In a non stick skillet combine onion and margarine. Saute over medium heat until transparent and slightly browned around the edges. In a medium bowl, combine egg substitute, skim milk, salt, pepper and chopped spinach. Whisk together. Pour into slightly baked pie shell. Top with grated Swiss cheese. bake in preheated oven for 40 to 50 minutes or until cheese is a light golden brown.
