2 Tbsp. butter2 medium sweet onions, sliced 1/3 c. Parmesan cheese 12 Ritz crackers, crushed
Directions:
Preheat oven to 350 degrees.
Melt butter in skillet over medium heat. Add sliced onions; stir to coat well. Cover and cook for ten minutes. When onions are nicely caramelized, transfer them to a 9 x 5-inch loaf pan. Combine Parmesan cheese and crushed crackers; pour mixture over onions in pan. Bake for 15 minutes. Enjoy!
Note: If you can't find Vidalia onions (their season is short!) substitute any sweet yellow onion, such as Texas 1015, or Walla Walla. This is great as a side dish, or as a topping for a juicy, grilled steak or a baked potato. It's as versatile as it is delicious!
