Yield:

Ingredients:
1 1/2 cups all-purpose flour (divided)1 1/2 cups peeled, chopped Golden Delicious apples
1/2 cup whole wheat flour
1/3 cup firmly packed brown sugar
1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup skim milk
3 tablespoons vegetable oil
2 egg whites, lightly beaten
Directions:
Combine 1/2 cup all-purpose flour and apple in a bowl, tossing gently to coat; set aside.
Combine remaining cup all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon, and salt in a bowl. Make a well in center of mixture. Combine milk, oil, and egg whites in a bowl, stir well. Add milk mixture and apple mixture to flour mixture, stirring just until dry ingredients are moistened.
Spoon batter into muffin pans, coated with non-stick cooking spray, fill two thirds full. Bake at 400 degrees for 20 minutes. Remove muffins from pans. Let cool on wire rack.
