Tex-Mex/Appetizers-Side Dish
16 servings, approximately 2 heaping tablespoons e
1 Slim Cado* avocado (35% fewer calories and 50% less fat than a California Avocado)
1 cup fat-free ricotta cheese
Juice of ½ a medium lime
1 teaspoon garlic powder
2 teaspoons cumin
½ teaspoon salt
½ teaspoon-1 teaspoon chili powder
1 medium red onion, diced
¼ cup-1/2 cup chopped cilantro
3-4 roma tomatoes, chopped
1-2 jalapeño, finely diced

1. In a large nonmetallic mixing bowl mash peeled avocado. Blend in ricotta cheese; lime juice, garlic powder, cumin, salt and chili powder until smooth.
2. Stir in onion, cilantro, tomato and jalapeño. Cover and chill until ready to serve.
