Two Pepper Burgers with Chipotle Mayonnaise

4 servings
Ingredients:
1/4 cup fat-free mayonnaise
1 chipotle pepper in adobo sauce, seeded and finely diced
¼ cup finely chopped shallots
1 jalapeño pepper, seeded and finely diced
1 clove garlic, minced
1 teaspoon Cajun seasoning
1 pound 96% fat-free ground beef
¼ cup 2% milk reduced fat cheese, shredded
4 hamburger buns, toasted
Directions:
1. In a small bowl combine mayonnaise and chipotle pepper, cover and chill until time to serve.
2. In a large bowl combine shallot, jalapeño, garlic, Cajun seasoning and ground beef. Shape into 4 patties.
3. Place on unheated rack of a broiler pan. Broil 4-5 inches from heat 6-7 minutes on each side or until internal temperature reaches 160 degrees.
4. Top with shredded cheese and broil another 30 seconds or until cheese is melted.
5. Serve on buns with chipotle mayonnaise.
