Festive Holiday Fudge

It's time to Get Cookin' and New Year's Eve parties.  News On 6 reporter Rick Wells is in the kitchen with a St. John dietitian making Festive Holiday Fudge.

Ingredients:
Butter-flavored cooking spray
1 cup warm cooked pinto beans, drained
¾ cup *light margarine or butter, melted
1 cup cocoa
1 tablespoon vanilla extract
2 pounds powdered sugar
1 cup chopped pecans

Directions:
1. Spray a 9-x13 inch baking dish with cooking spray and set aside.
2. Using a mixer or in a food processor or blender mash beans, add butter, cocoa and vanilla, blend well.
3. Stir in powdered sugar and nuts until well combined.
4. Press into baking dish and refrigerate until ready to serve.

Yield: 60 servings
