Hearty Holiday Sausage Muffins

¾ c. Shawnee Best yellow cornmeal

¼ c. Shawnee Best all-purpose flour

1 tbsp. baking powder (yes, one tablespoon!)

1 tsp. salt

2 eggs, slightly beaten

1 c. Borden sour cream

½ c. Hiland butter, softened

½  lb. J C Potter medium pork sausage

1 (10 oz.) pkg. frozen corn, thawed

1 c. Borden grated sharp cheddar cheese

½ c. chopped sweet red bell pepper

1 tsp. hot pepper sauce (or to taste)



  1. Preheat oven to 375 degrees.  Grease a muffin tin.
  2. In a medium skillet, thoroughly cook pork sausage; drain and set aside. 
  3. In a medium mixing bowl, combine cornmeal, all-purpose flour, baking powder and salt; mix together well.
  4. Add the eggs, sour cream, and butter; mix until thoroughly combined. The batter will be light and fluffy.
  5. Add the corn, cheese, sweet red bell pepper, sausage and hot pepper sauce. 
  6. Fill greased muffin tin with batter almost to the top.  Bake 15 to 19 minutes, testing for doneness with a toothpick. 
  7. Remove from pan and let set for 1 minute.  Remove muffins from pan.  These are delicious with a cup of Neighbors brand coffee!   Enjoy!

 Yield:  1 ½ dozen muffins
