Vegetarian Pasta

6 oz pasta of your choice

4 oz of buffalo mozzarella

2 oz extra virgin olive oil

3 oz cherry tomatoes

1 handful spinach

1 pinch of salt

1,1/2 teaspoon lemon pepper seasoning


1. Drop pasta in salted water and cook for about 12 minutes to al dente

2. On a hot pan sauté cherry tomatoes and spinach season the vegetables with salt and lemon pepper when the spinach is wilted add the pasta and mozzarella chunks toss for about 30 seconds till the mozzarella starts to melt and serve on a large bowl

3. Garnish with chopped parsley and parmesan cheese (optional)
