Lemon Scampi With Fettuccine
1 pound frozen cooked peeled & deveined medium shrimp, thawed
olive oil
3 tablespoons butter
3 garlic cloves finely, chopped
zest of 1 lemon
1 teaspoon salt
1 teaspoon pepper
1 pound fettuccine pasta, cooked
Juice of 1 lemon
¼ cup parmesan cheese
¼ cup Italian parsley, chopped
In a large skillet drizzle olive oil over the bottom and add in the butter. Allow this to melt over medium heat. Add in the minced garlic and lemon zest cooking for about a minute. Add in the shrimp cooking till it is warmed. Pour in the lemon juice and stir in the fettuccine. Using tongs toss the pasta to warm it through. Sprinkle with parmesan cheese and parsley. Serve with salad and french bread!
