Pumpkin Smoothies

Ingredients

1 can (15 ounces)
100 percent pure pumpkin puree (not pie filling)
1 cup fat-free plain Greek yogurt
1 ½ cups
2 percent milk
3 tablespoons honey
1 teaspoon vanilla extract
¼ teaspoon pumpkin pie spice or ground cinnamon
Pinch of salt
4 squares cinnamon graham crackers, crushed (optional)

Directions

1. Place the pumpkin puree in a freezer-safe container and freeze it until solid, at least 3 hours.

2. Combine the frozen pumpkin, yogurt, milk, honey, vanilla extract, pumpkin pie spice, and salt in a blender and puree the mixture until smooth.

3. Divide the smoothie among four glasses. Top with the crushed crackers if desired.

Tip: Don't have time to freeze the pumpkin? Just add ½ cup of crushed ice to the blender along with the other ingredients.

Prep Time: 10 minutes (plus 3 hours for freezing)

Servings: 4
