Soul Stuffed Sole

2                              5oz Dover Sole Fillets
3oz                         Lump Crab Meat
1oz                         Panko Bread Crumbs 
1/4                          Jalapeno, Seeded & Diced
1/2                          Shallot, Diced
1 T                          Capers
1 T                          Garlic, Sliced
3                              Lemon Slices (thin)
1 T                          Olive Oil
2 T                          Butter
                                Salt & Pepper (to taste)

Mix together crab meat, Panko, Jalapeno, and shallot in a bowl. Season the sole and scoop mixture onto fillets. Fold the fillet over to make a small package. Heat up the skillet using high heat, add olive oil, and place sole folded side down. Once the fillet is seared, place the pan in 500 degree oven and cook for 5-7 minutes. Heat a separate pan on high heat and add the butter to brown. Then, add capers, garlic, lemon, and salt & pepper. Sauté for 1 minute and remove from heat. Place sole on your plate of choice, spoon brown butter over the top
