Ingredients:

  • Red Wine Vinaigrette
  • ¼ c red wine vinegar
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ½ c Olive Oil

Salad

  • 1 small cucumber, peeled, seeded and cubed
  • ½ small red onion, thinly sliced
  • 3 tomatoes cut into bite-sized cubes
  • 3 ½ c bite-sized watermelon cubes, seedless and chilled
  • 1 red bell pepper, diced
  • 2 avocados, cubed
  • 7 oz feta cheese, cubed
  • 1 cup mint, thinly sliced

Directions:

  1. For the vinaigrette, whisk the vinegar, salt and pepper to blend.  Gradually whisk in the oil to blend well.  Can be made a week ahead and stored in an airtight container in the fridge.
  2. To make the salad, combine salad ingredients and top with vinaigrette.  Serve immediately.
