Peanut Butter and Banana Sandwiches

Serves 4
Ingredients:
2 eggs, lightly beaten
1/4 cup milk
1/2 teaspoon. vanilla
1/2 teaspoon ground cinnamon
Pinch of salt
8 slices Panera Cinnamon Raisin Bread
3/4 cup crunchy peanut butter
2 bananas, peeled, sliced in half and then into lengthwise strips
4 tablespoons butter
Powered sugar ~ optional
Syrup or berries ~ optional
Directions:
In medium bowl, lightly beat eggs. Add milk, vanilla, cinnamon, and salt; mix well.
Spread one side of each slice of bread with peanut butter, dividing equally. On 4 of the slices layer the banana pieces, then cover with the other 4 slices making 4 sandwiches.

Melt butter on a large nonstick griddle or skillet. Dip sandwiches into the egg mixture, coating both sides. Place on griddle and cook the sandwiches until each side is brown, approximately 1 to 2 minutes per side.

To serve, slice sandwiches in half and dust with powdered sugar. Optional accompaniments are warm syrup and or fresh berries.
