4 Egg yolks 1/4 c. Marsala wine 1/4 c. Sugar 1 c. Whipped cream 4 c. Mixed fresh berries and quartered strawberries
In a stainless steel mixing bowl combine egg yolks, sugar, and marsala. Mix thoroughly and place over a small pot of simmering water. Whisk the egg mixture until it triples in volume and turns a pale yellow. This takes about five minutes. Remove from the heat and chill on an ice bath. Once cooled gently fold in the whipped cream. Divide the berries in four glasses or bowls and top with the zabaglione.
