Here's a tasty summer-time recipe for a Watermelon Feta Salad.
·8 lb. whole seedless watermelon, chilled (about 12 cups of cubed fruit)
·1/4 cup extra virgin olive oil
·3 whole limes, juiced
·To taste- Salt
·1 cup fresh mint leaves, chopped
·1 1/2 cups crumbled feta cheese (sheep's milk feta preferred)
·4 tbl. Balsamic Vinegar
1. Cut watermelon in about ½ inch chunks with rind removed. Place watermelon in a bowl.
2. Toss watermelon with all remaining ingredients.
3. Garnish with fresh mint chopped.
