1 box pearled cous cous, prepared according to package
2 cups butternut squash, chopped
1 bunch swiss chard, chopped
1/2 cup pomegranate seeds
olive oil
salt and pepper
In a sauté pan over medium heat sauté the butternut squash with the Swiss chard till tender. Add salt and pepper as needed. Once it is tender toss with cous cous. Sprinkle with pomegranate seeds and serve!
