Ingredients:

1 Tbs minced shallots

2 Tbs extra virgin olive oil

2 tsps white wine vinegar

¼ tsp salt

¼ tsp Dijon mustard

1/8 tsp freshly ground black pepper

6 cups arugula leaves

2 Bosc pears, sliced thinly

¼ cup chopped walnuts, toasted

¼ cup red onion sliced thinly

OPTIONAL: ¼ cup Feta cheese*

 

Directions:

1. Combine first 6 ingredients in a large bowl and stir with a whisk.

2. Combine arugula and pears in a large salad bowl and toss gently with dressing.

3. Place about 1-1/2 cups salad on each plate; sprinkle walnuts and feta cheese* and serve immediately.
