Mint-Yogurt Dip

Makes about 2 cups.

Ingredients:

1½ cups plain low-fat Greek yogurt

1 cup (packed) fresh mint leaves, finely chopped

3 to 4 cloves garlic, peeled and finely minced

½ teaspoon salt

½ teaspoon freshly ground black pepper

Juice of ½ lime

Carrots, Cucumbers, Pita flat bread for dipping

Instructions: Mix all of the ingredients together in a bowl and refrigerate until well chilled.

Storing: You can make the dip up to 6 hours ahead; cover and chill until needed.

A refreshing dip that is found throughout the Middle East and parts of Central Asia that is usually always included as part of a mezze or appetizer buffet. It is also known as Labneh, which is a soft, cream cheese made from strained yogurt. This appetizer dip is a natural with your favorite fruit, vegetables, and flat breads perfect for Spring and Summer.
