Zesty Hoppin John Salad

3 15 oz cans of Black Eyed Peas (Drained)

8 stalks of Celery

1/2 cup of Roma Tomatoes Cut into 1/4" Dice

1 Red Onion Cut into ¼" Dice

1 Green Bell Pepper Cut into ¼" Dice

1 Yellow Bell Pepper Cut into ¼" Dice

1 Red Bell Pepper Cut into ¼" Dice

1/4 cup Salt & Pepper

1/4 Lemon Juice

1/4 cup Balsamic Vinegar

1 tbsp Olive Oil

Chopped Cilantro

Red Pepper Flakes to Taste

4 Leaves Romaine Lettuce (or as needed)

1 tbsp Garlic Minced

4 slices of Bacon


Combine black eyed peas, celery, roma tomatoes, red onion, green, yellow, red bell peppers, in a salad bowl.

Grently Stir lemon juice, balsamic vinegar, olive oil, red pepper flakes, & cilantro into the salad.

Chill 3 to 4 hours before serving; serve over romaine lettuce leaves.
