4 cups V-8 juice 1 small white onion, chopped 3 medium tomatoes, chopped 1 green bell pepper, chopped 1 cucumber, peeled, seeded and chopped 2 cloves garlic, minced 4 green onions, chopped 1/4 cup fresh parsley, chopped Juice of 1 lime Juice of 1/2 lemon 2 tbsp. extra-virgin olive oil 2 tbsp. red wine vinegar 1/2 tsp. cumin 1 tbsp. fresh basil, chopped 1 tbsp. fresh tarragon, chopped Tabasco sauce, salt and pepper to taste Garnish with thin slices of lemon and lime and/or stalk of celery.
Directions:
Add all of the ingredients except garnishes into a large bowl. Mix well and chill covered for several hours or overnight. Serve in chilled bowls. Garnish with items mentioned.
