3 T. olive oil 2 garlic cloves 1 small onion, chopped 1/4 C. each green and red bell pepper, chopped 1/4 C. zucchini, chopped 6 mushrooms, sliced 1/2 C. Parmesan cheese, grated Salt and pepper to taste 1/2 tsp. thyme 1/3 C. diced ham 6 eggs
Directions:
Set oven on broil. In skillet sauté onions and garlic together in olive oil. Then set aside. Next sauté bell pepper and zucchini. Set aside. Then sauté mushrooms. Beat eggs and then add cooked vegetables and other ingredients. Heat olive oil and cook eggs for several minutes until draws away from side. Put mixture in oven until golden brown. Serve with your favorite salad.
