Spinach Artichoke Chicken from Komen Oklahoma.
3-4 chicken breast (thawed)
1/2 cup sour cream
1 package of cream cheese
2 cups of shredded mozzarella cheese
1/4 of shredded Parmesan cheese
2 tablespoon of minced garlic
1 can of artichokes (chopped)
1 cup of fresh spinach (chopped)
Salt and pepper
Preheat over to 350. Season the chicken with salt and pepper. If large pieces, cut them in half and put them in a baking sheet. Bake for 20-30 mins until chicken is cooked through. While chicken is baking, mix the rest of the ingredients together to make the spinach artichoke dip. Set aside. Once the chicken is done baking, cover with dip. (Optional - add mozzarella to the top before putting back in the oven.) Put chicken back in to the oven uncovered for 10-15 mins until the tips started to melt and turn a little brown. Take out and serve with your favorite sides (i.e. rice or mashed potatoes). Serve with cauliflower rice for a healthier option.
