It's prime gardening season and you might be looking for a healthy recipe for all those vegetables you're growing. Our friends from KVOO Amber and Brooks are making a zucchini lasagna.
2-3 Zucchini (sliced thinly lengthwise)
1 small yellow onion
2 cloves garlic (minced)
3 cups chopped spinach
2 cups marinara (I use spicy!)
1 lb ground beef
½ lb ground italian sausage
1.5 cups ricotta
2 cups grated Italian cheese blend
Preheat the oven to 350 degrees.
In large skillet, brown beef, sausage, and onions until cooked through. Add garlic, spinach, and marinara, stirring until combined and let simmer over medium-low heat until most of the liquid is cooked out (5-10 minutes). Stir in ricotta and remove from heat.
In square baking dish, lay zucchini slices flat, overlapping just slightly, and layer with half the beef/sausage filling. Top with shredded cheese and repeat. Bake at 350 for 30 minutes, let sit for 5 minutes, then serve.
