Italian Chicken Sausage & Pepper Sandwiches

Angela Parris WW joined News On 6 with another healthy and delicious recipe. This week we are making Italian Chicken Sausage and Pepper Sandwiches.


  1. 2 tsp, olive oil extra-virgin
  2. 2 large, raw Cubanelle pepper thinly sliced
  3. 1 large, uncooked onion(s) yellow variety, thinly sliced
  4. 1 tsp minced garlic
  5. ¼ tsp dried oregano
  6. 3 Tbsp Water
  7. 2 tsp, red-wine vinegar or cider vinegar
  8. ⅛ tsp, table salt or to taste
  9. 1 pinch, black pepper freshly ground
  10. 12 oz, cooked chicken sausage(s) Italian-variety (4 links)
  11. 4 tsp, Dijon mustard or other hot mustard, or to taste
  12. 4 item(s), reduced calorie hot dog bun(s) grilled


Heat oil in a large nonstick skillet over medium-high heat. Add peppers and onion; cook, stirring often, until nicely charred and tender, about 12 minutes.

Stir in garlic and oregano; cook 30 seconds until fragrant. Stir in water; toss to moisten mixture. Remove from heat and stir in vinegar; set aside.

Heat outdoor grill to medium-high (or grill pan over medium-high heat).

Grill sausages, turning, until nicely charred on all sides, about 10 minutes.

Spread 1 teaspoon mustard on each bun; add sausage and top each with about 1/3 cup pepper-onion mixture. Yields 1 sandwich per serving.
