Cooking Corner: Baked Lollipop Chicken, Kids Corn Salad

Jeff Tracy, the Cowboy Cook, is back at the cooking corner with a recipe for Baked Lollipop Chicken and a Kids Corn Salad.

Baked Lollipop Chicken


  1. 14 chicken drum sticks
  2. Salt
  3. Pepper
  4. Garlic powder
  5. 1 orange
  6. BBQ or Basting sauce of your choice.

Pre heat the oven to 350*

Use a kitchen knife or scissor to cut the skin and tendons around the base of each drumette.

Peel, scrape and push the meat down to the thick end, from top to bottom. It made the drumette looks just like a lollipop.

Repeat with remaining chicken drumsticks.

Squeeze the juice for ½ a fresh orange on the drumsticks

Season with Salt, pepper, and garlic powder.

You can also season with ranch dressing powder for a different kind of flavor.

Arrange the chicken drumettes on the drumstick hanger or wire rack set over a baking pan. Bake until the chicken is nicely browned and slightly charred, and completely cooked through, for about 35 minutes.

Baste with your favorite BBQ sauce or dipping sauce or just serve plain.

Kids Corn Salad


  1. 2 cans of corn
  2. ½ orange or red bell pepper
  3. ½ cucumber dices
  4. 10 grape tomatoes halved
  5. 2 green onions
  6. 4 large radishes or celery if you wish
  7. For the dressing:
  8. 1 Tbsp lime juice (fresh squeezed)
  9. 1 Tbsp olive oil
  10. 2 tsp honey
  11. Dash of garlic (minced) or powder

Drain the corn and rinse lightly, add the bell pepper, onion, cucumber and radish.

Place all the vegetables in a large bowl and mix together until well combined.

Select or make your dressing and mix in the salad include a dash of salt and pepper.

Cover and refrigerate until ready to serve.
