Ingredients:
1 tilapia filet about 8 oz
8 oz shredded cabbage
4 oz diced fresh tomato
4 6" white corn tortillas
Cajun seasoning
Chipotle ranch dressing
Lime
Chipotle ranch dressing
1 cup ranch dressing
1 teaspoon chipotle sauce
Directions:
Combine both ingredients together and mix well
Season tilapia filet with Cajun spice. Heat grill or broiler to medium-high heat.
Mist tilapia filet with olive oil or cooking spray. Cook filet for 3-4 minutes per side depending on thickness. Cut filet into 4 equal portions. Warm tortillas in oven or on grill.
Fill each tortilla with tilapia, top with cabbage, tomato and chipotle ranch. Serve with lime wedge.
