Tuna Salad Bake
Ahi tuna poached, 1 lb
Salt, 1 teaspoon
Sweet pickles, 3 tablespoons
Lemon juice, 2 teaspoons
Hot sauce, ¼ teaspoon
Celery minced , 3 tablespoons
Yellow onion minced, 3 tablespoons
Mayo, ½ cup
Garlic powder, 1 tablespoon
1. Poach tuna in a quart of water with olive oil, garlic, thyme, salt, and bay leaves
2. Let tuna cool then combine tuna, lemon juice, salt, and hot sauce. Use a fork to press upon the tuna to finely mince and fold into the other ingredients.
3. Add mayo and continue to fold.
4. Add pickles, onions, and celery and mix thoroughly.
5. Stuff inside a bake that has been sliced in half (a bake is a traditional Caribbean fried dough made with flour, water, baking powder, sugar, butter and salt)
Caribbean Bake Johnny Cake
Flour, 3 cups
Baking powder, 1 tablespoon
Sugar, 2 tablespoons
Salt, 1 teaspoon
Butter (soft), 2 ½ tablespoons
Water, 1 cup
Vegetable oil for frying, 1 ½ cups
1. Mix dry ingredients in a large mixing bowl and then add butter working it in with your hands.
2. Add 1 cup of water to the dry ingredients and mix until smooth.
3. Sprinkle some extra flour onto a flat surface and knead the dough until smooth.
4. Allow the dough to sit in a covered bowl for at least 30 minutes.
5. Heat the oil in frying pan over medium heat.
6. Create small balls of dough and flatten each ball on a lightly-floured surface with a rolling pin or the palm of your hand.
7. Drop each circle in the hot oil.
8. Fry on each side until golden brown.
9. Allow to cool and drain on paper towel.
