Andolini's Chicken Picatta Pizza
Pizza Dough - 1 14oz dough ball
Butter, 4 oz melted
Oregano (generous pinch)
Garlic minced (pinch)
Mozzarella cheese 7 oz, shredded
Take 1 large or two small boneless skinless chicken breasts, slice into strips about 1/2 thick, lightly salt, and pan fry in extra virgin olive oil. Push out your dough, add melted butter to pizza and spread around pizza Sprinkle with a pinch of minced garlic and a pinch of oregano. Then add capers and sliced fried chicken breast. Squeeze a wedge or two of lemon on the pizza (don't go overboard). Top with cheese, then bake on stone at 550 for 6 minutes or until a deep gold color is reached on the crust. Top with a lemon wedge.
