Cast Iron Ribeye
Ingredients:
Thick cut Ribeye, choice or higher grade
Rosemary, fresh
Thyme, fresh
Garlic, whole cloves
Butter, room temperature
Olive oil
Salt and Pepper
Instructions:
Get cast iron skillet started heating on medium/high heat. Season steak generously with salt and pepper on both sides and set aside.
Drizzle olive oil in bottom of pan just to lightly coat. Wait for oil to almost begin smoking and add steak.
Sear for about a minute and a half on each side or until you see a nice caramelization on the steak. Remove steak from pan and let rest on rack.
Add in herbs and garlic. Lightly toast for about 30 seconds stirring in the pan. Add butter and return steak to the pan.
Baste continuously to brown the steak even more. Let steak rest and slice to serve.
Garlic and Herb Butter
Ingredients:
1T Rosemary, minced
1T Thyme, minced
1T Parsley, minced
3T Garlic, minced
1lb. Butter, softened
Instructions:
Combine all ingredients in a mixer with the paddle attachment and mix until incorporated. Once incorporated, whip on high for 3 minutes. Scrape bowl down and whip for another 2 minutes. Store in container and refrigerate.
