Sesame Lemongrass Ginger Chicken Legs

Ingredients:

  • 1 tablespoon sesame oil
  • 1 tablespoon fish sauce
  • ¼ cup orange juice
  • ¼ cup minced shallots
  • 1 large lemongrass stalk, trimmed and minced (about 3 tablespoons)
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • ½ teaspoon black pepper
  • Zest of 1 lime
  • 2 teaspoons kosher salt
  • 8 chicken legs
  • 1/4 cup sesame seeds

Directions:

  1. Combine all ingredients in a gallon size zip top bag, coating chicken well.
  2. Allow to marinate at least 24 hours, flipping bag a couple of times throughout the marinating time.
  3. Preheat oven to 400.
  4. Roast on wire rack for 15 minutes.  
  5. Flip and roast and additional 15-20 minutes or until juices run clear and meat is very tender.
