Lemony Asparagus With Mushrooms & Thyme

1 pound fresh asparagus, trimmed and cut into 1 inch pieces

1/2 pound fresh mushrooms, sliced

2 tsp. butter

1 tsp. extra virgin olive oil

2 cloves garlic, minced

2 tsp. fresh thyme, minced

1 - 2 tbsp. fresh lemon juice, or to taste

1/2 tsp. lemon zest

salt and fresh ground pepper, to taste


In a large skillet on medium heat saute butter, oil, mushrooms, thyme, and garlic for 1 minute. Add asparagus and cook until mushrooms are tender and asparagus is bright green and crisp tender. Stir in the remaining ingredients and serve. Serves 4.
