Andolini's Penne Pomodoro

12 oz. uncooked penne
4 oz. butter
24 oz. marinara
1 Tbsp minced garlic
1/4 cup diced basil
1 cup Romano cheese
1.5 cups heavy cream
6 oz. shredded Mozzarella cheese

Cook penne to al dente firmness in rolling boiling water… approximately 10 minutes.

While the penne is cooking, make your sauce and preheat your oven to 400 degrees.

Add butter to a large sauce pan set over medium heat. Add garlic and cream to pot. Melt, stirring to combine. Once combined, add Romano cheese and whisk. Add in marinara (your own or pre-made), whisk gently to combine. Add basil. Simmer for a few minutes to allow ingredients to blend.

Drain the penne, and add it to sauce pot. Stir gently to coat penne with sauce. Place mixture in a 9 x 12 baking pan and cover with Mozzarella. Bake for 10 minutes at 400 degrees or until cheese begins to brown.
