Bacon Wrapped Crab Stuffed Shrimp

Shrimp 16/20 – peeled and devein  
1lb bacon
1lb lump crab meat
1 slightly beaten egg
1 tsp. Worcestershire sauce
1 pinch of cayenne pepper
½ cup bread crumbs
¼ cup Mayonnaise
¼ tsp. garlic powder
Juice of ½ lemon

Par cook bacon at 325 degrees for 6 minutes. Blend all ingredients, except shrimp and bacon. Stuff shrimp with crab mixture, and wrap with par cooked bacon; secure with tooth pick. Bake at 325 degrees for 15 minutes. 

Pancetta Cream Sauce

Pancetta diced small            1 cup
Chopped garlic                2 Tablespoons    
Chopped shallots            2 Tablespoons
Borsion Cheese                24 ounces
White wine                1 cup
Heavy cream                1 gallon
Chopped chives                ½ cup
Salt and pepper                to taste

Add small amount of oil to the pan, once hot, add Pancetta and reduce heat. Cook for three to five minutes. Add garlic and shallots, cook about a minute and reduce with wine. Add cream and cheese, reduce half way. Add salt, pepper and chives.
