Ingredients:
7 Pounds of Country Style Ribs
12 ounce bottle of spicy brown mustard
JOE BBQ Pork and Poultry Seasoning
Directions:
Fire up your Grill/Smoker as per the instructions in the manual. Make sure to build the fire next to one side of the grill, or in the Firebox so that you cook with indirect heat.
Rub the mustard all over the Country Style Ribs liberally. Liberally apply Pork and Poultry Seasoning.
Once charcoal is ready to cook on, add a few wood chunks to the fire.
Cook Ribs (unwrapped) at 225ºF to 250ºF using indirect heat and smoke for 2 hours flipping once. Make sure ribs are positioned away from the coal bed, near the smoke stack. Add charcoal and wood as needed to maintain cooking temperature.
After ribs have cooked 2 hours, wrap ribs in foil.
Continue to cook for approximately 2 hours at 250 degrees until ribs have reached an internal meat temperature of 190 or above. This will really make the ribs tender.
Pull ribs from cooker and let rest at room temperature for 1/2 hour.
Remove bone from country style ribs and cut into chunks.
Place rib tips in a foil pan and baste with sauce. Place in smoker or oven at 300 degrees for 15 minutes or until sauce starts to caramelize.
Remove from heat and serve with your favorite side dishes.
Total cooking time: 4.5 hours
Recommended wood(s): Pecan, Hickory, or Oak
