Savory Pecan Cheese Waffles With Scissortail Greens & Herbed Buttermilk Dressing

Savory Pecan Cheese Waffles

For the waffles:

2 eggs

2 cups buttermilk

1 1/4 cup all-purpose flour

3/4 cup pecan flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

¼ cup pecan oil

3/4 cup grated cheese - we used Lovera's

Whisk eggs and buttermilk together. Stir in all other ingredients. Mix gently. Pour into hot waffle iron for 4.5 minutes

Herbed Buttermilk Dressing

3 cloves garlic

½ bunch cilantro

2 tablespoons fresh oregano

¼ cup snipped fresh chives

2 tablespoons fresh dill

1 teaspoon salt

½ teaspoon freshly cracked pepper

1 cup good-quality or homemade mayonnaise

½ cup local plain yogurt

¼ cup white vinegar

1–2 cups buttermilk

Blend all ingredients except buttermilk in blender. Add buttermilk until dressing reaches desired consistency.

Top waffle with greens. Drizzle dressing over greens.
