4 sweet potatoes, peeled and cubed into medium pieces
2 Granny Smith apples, cored and cut into cubes
2 yellow onions cut into quarters
4 cloves garlic, roughly chopped
1 Tablespoon fresh rosemary, roughly chopped
4 Tablespoon olive oil
¼ cup honey
1 teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon cayenne pepper
Preheat oven to 375 degrees. Place all of the ingredients in a large bowl. Toss together coating all of the pieces and then pour onto a lightly greased baking sheet. Bake in the oven for 45 minutes, tossing the pieces every 20 minutes. Turn the heat to 500 degrees and cook for an additional 15 minutes browning the potatoes lightly. Remove from heat and serve warm.
