Butternut Squash, Goat Cheese & Spiced Apple Crostini

2 cup ¼ in cubed butternut squash

¼ medium onion, minced

1Tbs olive oil

¼ tsp salt

¼ tsp pepper

4 2in x 2in pieces of crusty bread

½ Tbs olive oil

1 clove of garlic

1 peeled & cored apple, cut into thin slices

¼ tsp ground nutmeg

1 Tbs brown sugar

1 oz melted butter

goat cheese, to suit

Preheat oven to 400'. Place all ingredients in a mixing bowl and evenly coat butternut. Place butternut squash on a sheet pan and roast in oven for 15-20 or until slightly soft but not mushy. Remove from oven and let cool to room temperature.

Rub bread pieces with olive oil, cut off the tip of the clove of garlic and rub on bread. Sprinkle slightly with salt. Place on sheet pan and bake for 5-6 mins or until golden brown.

Take all ingredients and place in a sautè pan and cook over medium heat for 8-10 minutes until tender. Remove from heat

To build the crostini, place apple slices on crostini then top w diced butternut and sprinkle w goat cheese.
