Rainbow Fruit Wrap:
1 cup sliced strawberries
1 cup sliced oranges
1 cup sliced pineapple
1 cup sliced kiwi
1 cup fresh blueberries
2 whole wheat tortillas
¼ cup light cream cheese spread *may also substitute peanut butter
Directions:
1. Lay the tortillas out on a flat working surface. Spread about 2 tablespoons of the cream cheese* spread on each one, leaving a ½ inch border.
Layer each color of fruit in a row to make a rainbow. Roll up the wrap and serve immediately.
Apple, Ham, and Cheese Quesadilla
1 Tbs Apple preserve, jam, or jelly
1 8 in whole wheat tortilla
¼ cup shredded Swiss cheese *may also substitute with sliced Brie cheese
1 oz (3 Tbs) Diced Ham
4 thin slices Granny Smith Apple
DIRECTIONS:
1. Heat a grill or grill pan to medium. Spread apple preserves on half the tortilla. Scatter half the cheese on top, followed by the ham, apple slices and remaining cheese. Fold over tortilla
2. Grill tortilla on medium heat for 2 to 3 minutes per side, until cheese is melted and grill marks are present. Slice into 3 wedges and serve.
