4 Boneless chicken Breasts
½ cup Olive Oil
1 Fresh Garlic Clove (minced)
2 Tomatoes (Diced)
6 Chives (chopped)
2 yellow Squash (diced)
1 package mushrooms (sliced)
4 Angel Hair Pasta Clusters
1 French bread Loaf (Crostini)
Fresh Parmesan cheese
Preheat oven 375
Bring water to a boil in large pot
Butterfly chicken and place on grill (inside or outside)
Slice French bread thin, brush with olive oil or butter, season to taste with sea salt and cracked black pepper. Place in oven.
Add pasta to water
In medium skillet on medium-medium high heat, add olive oil to coat the pan, add garlic and squash sauté approx. 1 minute. Add mushrooms sauté another 2 minutes. Add tomatoes and chives. Cook just till tomatoes are tender and hot. Drain pasta clusters and roll inside skillet and plate.
Remove chicken and slice into strips. Place chicken over pasta sprinkle with fresh parmesan cheese and serve with warm bread (crostini).
This is a simple recipe which many items can be substituted for a particular taste.
