Ingredients
• 4 to 5 cups Pink Ribbon Bagels torn or cut into 1 inch pieces (appx. 3-5 bagels)
• 2/3 cup dried cherries
• ½ cup chocolate chips
• 5 eggs
• ½ cup sugar
• ¾ teaspoon cinnamon
• ¼ teaspoon nutmeg
• ½ teaspoon vanilla
• 3 ½ cups chocolate milk
• Whipped cream to garnish
Directions
1. Preheat oven to 325ºF. Coat a 2-quart baking dish or eight 6- to 8-ounce ramekins with cooking spray and set the dish or ramekins on a rimmed baking sheet. Put bagel pieces in baking dish or ramekins in an even layer. Scatter dried cherries and chocolate chips on top. 2. In a large bowl, whisk together eggs, sugar, vanilla, cinnamon, and nutmeg until blended. Whisk in chocolate milk. 3. Pour egg mixture over bagel pieces, and then press down with a spatula until completely coated. Let stand at room temperature for 30 minutes, pressing down now and then to saturate bagel pieces. 4. Put baking sheet with the baking dish or ramekins in the oven, and then pour very hot tap water into the baking sheet to about 1/4 inch up the sides of the baking dish or ramekins. 5. Bake until pudding is just set in the center, 60 to 75 minutes for the baking dish or 35 to 45 minutes for ramekins. Remove and let cool until warm to the touch.
