Granola Cookie Wedges

1/3 cup packed brown sugar

2 tablespoons canola oil

1 tablespoon light butter, melted

½ teaspoon vanilla extract

¼ teaspoon salt

¼ teaspoon baking soda

1 large egg white

½ cup all-purpose flour

½ cup quick cooking oats

¼ cup chopped pecans (or nut of choice), toasted

2 tablespoons semisweet chocolate chips

Non-stick cooking spray

Preheat oven to 350 degrees. Combine first 7 ingredients in large bowl; stir until well combined. Lightly spoon flour into a dry measuring cup; level with a knife. Add flour, oats, nuts, and chocolate chips to sugar mixture; stir until just combined. Scrape dough into a 9-inch glass pie plate coated with cooking spray, and spread to edges using a spatula. Bake at 350 degrees for about 13-15 minutes or until set. Cool slightly on a wire rack.

Yield: 8 wedges.
