Ingredients:
Red Potatoes cubed, 2 cups
Garlic Crushed 1 clove
Mushrooms large diced, 1 cup
Leek or yellow onion 0.5 cup
Chard or Kale Coarse chopped, 2 cups
S & P To taste
Olive Oil 0.3 cup
Bacon, Sausage, or pork loin if desired, 3/4 Cup
Instructions:
It's best to use a red or white waxy potato, they hold up better after boiling. Par boil potatoes till just barely tender, sautee meat, (if used) till nearly done. Same with mushrooms. Set meat and mushrooms aside.
Start by browning potatoes in oil, till starting to brown, then add onion and garlic, same with greens.
Taste and adjust seasoning, and add meat if used.
Add 1/4 cup of white wine and cover to steam greens. This can be used for breakfast by adding eggs, or any other meal.
You can also add peppers, sweet or hot, Squash, what ever is in season.
